Guizhou mutton noodles
Guizhou province is rich in delicacies, one of which is mutton noodles. This dish originally hails from the city of Zunyi. Eating mutton noodles on the winter solstice is a widespread custom in Guizhou, because it can relieve the cold.
Wonder how it is prepared? After simmering in water for a few hours, the mutton slices are put to a bowl with cooked rice noodles. Chili oil, pepper powder, garlic sprouts, spring onion and other seasonings are added. Finally, the bowl is topped off with a scoop of steaming mutton soup.
Mutton soup is a delicacy of its own. Fresh mutton gives off all its aroma in a simmering pot. A special ingredient in the soup is stewed hen. To round out the flavors, a cube of rock sugar is added.
The end result is a fragrant and warming bowl of noodles!
